Criollo Chemistry
Our Sensory Blueprint
The exceptional quality of Cacao Criollo de Oricao is rooted in its highly distinct chemical blueprint, which serves as the ultimate benchmark for elite, unhybridized Venezuelan strains.
At the core of its therapeutic and sensory profile is a precise balance of methylxanthines; it boasts a theobromine content of less than 1.2% alongside exceptionally low caffeine levels between 0.1% and 0.2%. This specific ratio acts as the "Gold Standard" chemical marker proving its absolute genetic purity.
Furthermore, Oricao features the lowest possible Gallic Acid Equivalent (GAE) on the market—drastically undercutting bulk Deltano-Trinitario (60–80 mg GAE/g) and Amazonian-Forastero (70–90 mg GAE/g) varieties. Our GAE eliminates the harsh, mouth-puckering astringency common in lesser cacaos.
This chemistry extends to its 56% cacao butter content, where a unique triglyceride structure containing 35% stearic acid and 25% palmitic acid yields a significantly softer, creamier mouthfeel than hybrid alternatives while retaining its luxurious "snap" and glossy finish.
Finally, maintaining a perfectly natural pH of 5.3, this fine-aroma Criollo delivers the distinct, sharp, and subtly fruity acidity that chocolate connoisseurs revere.
Theobromine/Caffeine Ratio is used as the "Gold Standard" chemical marker to prove genetic purity; Oricao maintains a ratio which is the benchmark for elite Venezuelan strains.
The secondary methylxanthine in cacao is caffeine. Pure, unhybridized Cacao de Oricao has exceptionally low caffeine levels between 0.1% and 0.2%.
Oricao´s criollo has the lowest GAE possible. Bulk Deltano-Trinitario cacao typically ranges from 60 to 80 mg GAE/g, while Amazonian-Forastero varieties often double the criollo average at 70–90 GAE mg/g. High Gallic Acid Equivalent creates mouth-puckering astringency.
Our Cacao butter is made up of specific lipid molecules—primarily palmitic, stearic, and oleic fatty acids arranged into Triglycerides. The precise melting profile, "snap," and glossy texture of a finished bar depend entirely on these fats.
Our cocoa butter with
-35% Stearic Acid &
-25% Palmitic Acid or Saturated Fats
Gives it a softer, creamier mouthfeel compared to hybrids varieties.
A pH level of 5.3 for a Cacao Criollo is perfectly normal and expected. This low level of acidity provides the distinct, classic, sharp, and slightly fruity flavor profile that fine-aroma Criollo cacao is famous for.
